Today a vegetarian recipe, healthy that can replace second course, perfect for children.

The beans in version burgers, egg-free.

This one replace  meat and give us a different idea.

The beans have a lot of properties.

Main course, broad bean vegetable burgers, excellent replacement of the food in the vegetarian diet

Ingredienti
  • 200 g of dry shelled beans
  • a pair of bay leaves
  • 1 small potato
  • 1 carrot
  • 40 g parmesan
  • 1 tablespoon of flour
  • extra virgin olive oil
  • salt to taste
Preparazione
  1. Rinse the beans that do not require soaking (at least the ones I bought myself, still on the pack you will find instructions for boiling)
  2. Boil for about twenty minutes in salted water with a couple of bay leaves
  3. Meanwhile boil potato and carrot.
  4. Put everything in a blender and blend.
  5. Remove the mixture and add Parmesan cheese, salt, parsley, a little oil and a tablespoon of flour.
  6. Form burgers the size you want.
  7. Pass them in bread crumbs and place in the fridge for an hour.
  8. After cook them in a pan with a little'oil, turning them for 5 minutes

This is the favorite dish of my husband (what is not), it’s the chicken nuggets with vegetables, a light dish, tasty, to eat also with some toasted bread.

Ingredienti
  • 2 thick slices of chicken breast
  • flour to taste
  • salt to taste
  • extra virgin olive oil
  • 2 zucchini
  • 2 carrots
  • half a bunch of asparagus
  • 1 potato
  • parsley and marjoram to taste
  • ginger to taste
Preparazione
  1. Cut the chicken into strips, season with salt and pass it in flour
  2. Brown it well for about 20 minutes in a pan with a little oil.
  3. Cut the vegetables into julienne
  4. Except in a wok add a little oil and skip the vegetables, salt sprinkle of parsley, marjoram and ginger.
  5. Cook over medium heat for about 20 minutes with the lid closed, check every time, if not necessary don't add water.
  6. Then add the chicken with vegetables.

Stuffed Ligurian zucchini

Are you ready for the holidays? I’ve almost hooray !!!!

Today a good recipe using vegetables from  garden! Zucchini stuffed with tunny, pin nuts and basil.

Now I’m trying to shop vegetables km0, i think are too healthy.

I found them on a very old recipes’ booklet and the title was  this, so here the recipe:

Zucchini stuffed with tunny, pin nuts and basil

Ingredienti
  • 4 zucchini
  • 80 g of natural tunny
  • 1 egg
  • 30 g of cheese
  • 5-6 basil leaves
  • marjoram q.s.
  • salt q.s.
  • pine nuts
  • breadcrumbs q.s.
  • extra virgin olive oil
Preparazione
  1. Boil 2-3 minutes zucchini in salted water
  2. Remove them, dry and cut in half for the lengthwise
  3. Get the pulp of zucchini
  4. In blender, blend together the inside of the zucchini, tunny, pine nuts, basil, marjoram, egg and cheese
  5. Add to the mix a bitof breadcrumbs if it should be a bit thick.
  6. Fill the inside of the zucchini with this mixture
  7. Arrange in a baking dish greased with oil and cook circa 20 minutes at 180 degrees until golden.

It ‘s summer, it’s hot and it’s time to leave behind the hot and hearty!
These towers of zucchini are the exact solution for a quick  and fresh dinner.

It needs  grilled zucchini,  a little of the sauce advanced and fresh ricotta.

  • 4 round zucchini
  • 150 g of fresh ricotta
  • tomato sauce already 'previously prepared
  • grated cheese
  • extra virgin olive oil q.s.
  • basil q.s.
  • parsley q.s.
Preparazione
  1. Cut the zucchini into slices and grill them, put them on a plate, add salt a little , sprinkle with parsley and let cool.
  2. At this point composing the turret.
  3. On a slice of zucchini sprinkle a little sauce, small pieces of cheese, cover with another slice and again add cottage cheese and sauce, forming small towers.
  4. Enjoy them warm or cold at will

 

This can be considered a zucchini light parmisan!

Braised beef

Here is a dish typical of Sunday, who has never enjoyed a nice lunch with polenta and braised with its own family, especially with a nice glass of wine ?!

This time  I want to be a “modern” and so I haven’t made polenta, cause the temperature, but I assure you that lot of good bread,  braised is wonderful !!!

The wine used for cooking it ‘s a simple red wine, but the top is barolo.

Ingredienti
  • 700g of lean beef (priest's hat)
  • 2 carrots
  • 1 celery
  • 1 onion
  • 1 small potato
  • cloves q.s.
  • 2 glasses of red wine
  • 150 ml of tomato sauce
  • extra virgin olive oil
  • vegetable broth if necessary
  • salt q.s.
  • herbs (bay leaves, sage)
Preparazione
  1. Marinate a some hours before the lean beef with wine, celery, carrot, bay leaf, sage and cloves.
  2. Then begin to prepare it.
  3. In a large pot, fry the finely chopped onion, carrot and celery.
  4. Meanwhile with string tie a little meat to make sure that it will not come apart.
  5. Add the meat to the pan and let it cook for 10 minutes turning it over.
  6. Salt a little.
  7. At this point, add the past and after five minutes the wine marinade, carrot pieces celery and potato.
  8. Close the lid and cook over low heat for 2 hours 30 minutes, turning it over.
  9. If necessary add a little 'vegetable broth.
  10. The sauce it will wipe 'a little'.
  11. Cool down the meat
  12. Now whisk the sauce, untie the meat and slice it.
  13. Put in pan and let the sauce to flavor the meat for about 30 minutes
  14. Serve warm, if possible with polenta.

Meatloaf buckwheat

Hello !!! Today a different way of cooking to avoid falling into the usual meatballs! Yummy and lightweight, a very good receipe, healthy, enriched by the taste of the potato.

This time I don’t say that are gluten free for  the presence of bread, if you wanted to make it gluten free may present replace the bread with the gluten-free crackers crumbled.

Here the receipe of the meatloaf buckwheat:

  • 150 g of buckwheat
  • 50 g of bread soaked in milk
  • q milk. b. to soften the bread
  • 40 g of grated cheese
  • 30 g of breadcrumbs
  • 1 egg
  • flour q.s.
  • salt. b.
  • parsley q.s.
  • 2 potatoes
  • extra virgin olive oil
Preparazione
  1. Soak the bread in milk.
  2. Rinse under running water buckwheat and boil for about 20 minutes in salted water
  3. Drain well, place in a bowl, add the egg, soaked bread, grated cheese parsley.
  4. Season with salt.
  5. Grease a baking dish with olive oil.
  6. Molding of meatloaf mixture and flour it
  7. Lay it in the pan
  8. Enter the potato thinly sliced.
  9. Sprinkle with bread crumbs and grated cheese.
  10. Bake at 180 degrees for about 30 minutes until the meatloaf is beautiful golden

My family loves the chicken, in all its versions, this lemon one is great for young and old people.

The hint of ginger is optional, but gives a note at the plate.

  • 550 g of chicken nuggets
  • 1 shallot
  • semolina flour to taste
  • half a glass of white wine
  • 1 lemon
  • extra virgin olive oil
  • salt to taste
  • ginger to taste
Preparazione
  1. In a bowl put the flour, lemon zest and chicken nuggets.
  2. Season with salt and pass into the flour flavored morsels from the lemon zest.
  3. Finely chop the shallots and fry in a little oil in a nonstick skillet.
  4. Combine the chicken pieces, brown them, deglaze with white wine and cook covered for 15-20 minutes, if necessary add a little hot water.
  5. The last 5 minutes soak the chicken with the half lemon juice and sprinkle with ginger.

Gurnard with saffron potatoes

Finally a second course! Gurnard with saffron potatoes.

Well, I must say that  it’s the first time I try this  and we loved it!

Ingredienti
  • 600 g fillets of gurnard
  • 1 shallot
  • cherry tomatoes
  • white wine q.s.
  • 6-7 red skin potatoes
  • 1 sachet of saffron
  • extra virgin olive oil
  • coarse salt
  • marjoram to taste
  • parsley to taste
  • thyme to taste
Preparazione
  1. Peel and slice potatoes, cook them in a pan with a little oil, sprinkle with salt, marjoram, thyme and parsley.
  2. Dissolve saffron in a cup of water and put over potatoes.
  3. Cook for about twenty minutes, adding a little of water if the potatoes dry.
  4. A tip it's to put water to add more in the cup which was dissolved saffron, so not to lose the scent and color.
  5. At this point, rinse, remove the skin, the bones in the gurnard fillets and season with salt.
  6. Wash and cut tomatoes.
  7. In a saute pan with a little 'oil previously sliced shallots, add the fillets of gurnard and tomatoes, sprinkle with white and cook the fish for about 10 minutes.
  8. Add a little sauce of potatoes to give even the fish smell of saffron.
  9. Serve the fish on potatoes.

Chicken curry with black rice

This is my version of chicken curry.

I cooked it with fresh cream and black rice.

Ingredienti
  • 4 slices of chicken breast
  • 1 tablespoon flour 00
  • 1 small onion
  • 200 ml of fresh cream
  • 1 tablespoon of curry
  • white wine to taste
  • salt to taste
  • extra virgin olive oil to taste
  • 250 g of black rice as a side dish
Preparazione
  1. Cook black rice in salted water for 40 minutes.
  2. Cut the chicken into strips
  3. Meanwhile in a skillet brown with a little oil onion made into small pieces. Add the chicken into strips, season with salt and cook for two minutes blending with white wine.
  4. Now add the mixture of cream and curry.
  5. Restrict a little the sauce and cook the chicken, about 20 minutes.
  6. If it shrinks too much add a little water or milk.
  7. Serve with black rice to which we added just a bit of extra virgin olive oil.

Polenta and mushrooms

Ingredienti
  • 400 g of already cooked polenta
For the mushrooms:
  • 30 g of dried mushrooms mixed or porcini
  • white wine to taste
  • vegetable broth to taste
  • 1 shallot
  • 1 clove of garlic
For the sauce:
  • 20 g of butter
  • 20 g of flour type 00
  • 200 g of milk
  • 20 g of grated cheese
  • nutmeg
To garnish:
  • breadcrumbs
  • flakes of mountain cheese
Preparazione
Cook the mushrooms:
  1. Chop the shallots and brown with a clove of garlic and a little oil.
  2. Add the mushrooms previously soaked a couple of hours.
  3. add salt, sprinkle with parsley.
  4. Bake for 30 minutes blending with white wine and vegetable stock.
Prepare the sauce:
  1. Melt the butter over low heat, combine the flour and mix.
  2. Add milk and continue stirring with a whisk until the mixture comes to a boil and begins to thicken.
  3. Turn off, add the cheese, salt and nutmeg.
  4. Mix the mushrooms with the sauce, not too much, leave a little lumpy mixture, so that they feel the mushrooms in your teeth.
  5. Spread the polenta on a baking paper with moistened hands of oil.
  6. Spread the cream on the surface and roll up.
  7. Let the mixture cool in the refrigerator for half an hour.
  8. Remove it and slice it.
  9. Pass each slice in breadcrumbs.
  10. Butter the baking dish, arrange the slices of the roll, sprinkle branzi flakes and cook in the oven grill for about 20-30 minutes.

Ingredienti
  • 1 small cabbage
  • 350 g of ground beef
  • 150 g stuffing for salami
  • 40 g of grated cheese
  • 30 g breadcrumbs
  • salt to taste
  • extra virgin olive oil
  • 1 egg
  • nutmeg to taste
Preparazione
  1. Clean the cabbage leaves peeling off one by one and rinsing them under running water.
  2. Blanch in boiling salted water. (The ideal to have the cabbage with its brilliant green color is to use, to make it boil, the quality of starting and cold with ice.)
  3. Drain the leaves, let them cool and dry.
  4. Prepare the filling.
  5. Combine the ground beef stuffing salami.
  6. Add egg, cheese and bread crumbs.
  7. Add salt and a pinch of grated nutmeg.
  8. Shape into balls, fill each cabbage leaf and close like a bundle.
  9. Grease a baking dish with oil for good.
  10. Switch each roll in bread crumbs and lay it in the pan along with some small leaf here and there.
  11. Bake at 180 ° C for about 25 minutes, until golden.

This is a plate suitable for the thanksgiving day or for Christmas!

Roast turkey with green apples, the taste of savory strudel

Ingredienti
  • 3 thick slices of turkey
  • 25 g sliced ham
  • 2 thick slices of mortadella
  • 1 large carrot
  • 3 green apples
  • extra virgin olive oil
  • herbs (sage, rosemary, bay leaves)
  • vegetable broth
  • white wine to taste
  • salt and pepper to taste
  • 1 celery
  • 1 carrot
  • 1 onion
Preparazione
  1. Wash and dry the slices of turkey.
  2. Add salt and thin a little with a meat mallet.
  3. Approach them overlapping a little.
  4. At the center put mortadella, ham and carrot previously blanched.
  5. Close and roll up.
  6. Tie the roast with string and put between the wires rosemary, bay leaf and sage.
  7. Chop carrot, celery, onion and saute a minute with a little oil.
  8. At this point, add meat and brown it well for about half hour or blending with white wine, turning it on both sides.
  9. Afterwards take a pan, put the slightly and place the sliced green apples.
  10. In the center put the roast basting with the sauce of browned.
  11. Put in the oven for about 40 minutes, turning a few times until you blushed just fine so far as to form a nice crust on the surface and the apple is cooked.
  12. Serve hot with the apple sauce.
