Barley meatballs with pesto

Today I propose a recipe different from the usual ones, and I flashed in mind one day that I did not know how to cook barley.

As a cereal that does very well and also replaces the flesh, it’s good to introduce it in the diet, as an alternative to the usual cheese or meat, Here the receipe :

Ingredienti
  • 150 g of pearl barley
  • 1 bay leaf
  • 1 carrot
  • 1 small tomato
  • 2 tablespoons pesto (I made ​​at home)
  • 70 g breadcrumbs
  • 1 egg
  • extra virgin olive oil to taste
  • salt to taste
Preparazione
  1. Soak in warm water barley (unless it is written on the package that it is not necessary)
  2. Rinse well and boil in salted water with a broken tomato, 1 carrot and a bay leaf.
  3. Cook about 30 minutes, until cooked, drain and remove the tomato carrot and bay leaf.
  4. Place in a bowl, drizzle with two tablespoons of pesto, combine the egg and bread crumbs.
  5. Shape into balls and roll in breadcrumbs.
  6. Grease a baking sheet with oil, place the balls and cook in the oven at 200 g for 20 minutes, turning them over.
  7. They will be ready when it will be well flushed.

 

ps: These are are approximately for 10 meatballs, depending on the size you want to give.
I didn’t intentionally wanted to add grated cheese because there is already enough in pesto. Just breadcrumbs and will be tasty!

Ingredienti
  • 300 g of pearl barley
  • 80g of tuna in brine
  • 1 slice of swordfish
  • 10 cherry tomatoes
  • olives to taste
  • parsley
  • extra virgin olive oil
Preparazione
  1. Cook in boiling salted water for about 30 minutes the barley
  2. Drain and allow to cool
  3. In a separate pan, sauté in a little oil with the garlic fish with the tomatoes, salt and cook for about 15-20 minutes.
  4. Combine the tomatoes, fish and barley.
  5. Also add the drained tuna and olives
  6. Sprinkle with parsley and then drizzle with a little olive oil.
  7. Store in refrigerator until ready to serve

You can do it with other grains, then it is lightweight and does well because it has all the meat proteins, it acts as a substitute and not the egg. Here is the recipe hamburger barley:

Ingredienti
  • 120 g pearl barley
  • 1 small carrot
  • a few bay leaves
  • parsley
  • 50 g parmesan cheese
  • 4-5 tablespoons of flour + enough flour for burgers
  • salt to taste
  • extra virgin olive oil to taste
Preparazione
  1. Boil in salted water about thirty minutes the barley with carrot, bay leaves and a drizzle of oil (on the package and 'wrote that there is no' need to soak)
  2. Drain and let cool.
  3. Put everything in a blender eliminating the bay leaf.
  4. Then add the Parmesan cheese and mix well.
  5. Combine the flour to the mixture and form burgers.
  6. Dip them in flour and cook 2-3 minutes on each side-in a pan with hot oil
  7. When they are flushed well, remove from heat and drain on paper towels.

This recipe came from a tip, cold barley to the smell of the sea.

There was talk of cold salads, or summer in short and advised me this delicacies:

Ingredienti
  • 250 g Pearl barley
  • 10 cherry tomatoes
  • a dozen shrimp
  • enough black olives
  • 125 g jar of pesto genovese
  • 200 g squid
  • salt to taste
  • evo oil as required
Preparazione
  1. Soak the barley any hour (on some bottles there is written that does not require soaking, but an hour never hurts)
  2. Let it cook in salted water for 45 minutes.
  3. Meanwhile Cook in salty water also squids and prawns for about twenty minutes.
  4. Cut olives and cherry tomatoes, put them in a bowl, sprinkle with salt and drizzle with a little oil.
  5. Drain the barley and add to the tomatoes and season with pesto.
  6. Add the squid and shrimp. Mix well and refrigerate.
  7. Serve nice cool with a drizzle of raw oil.
  8. Stir from time to time because barley dry and tends to stick a little.

I thought I'd combine these ingredients without adding more because with too you overdo it!
