Spelled flatbread with mozzarella

Day has passed, how did you spend the weekend? We’ve brought the child to the petting zoo , we had a blast and the little girl is finally rising about the Dear pony ! She really wanted to go up as well on the horses ! hahaha … Sometimes we want these days ! .

Talking about food , sometimes we have dinner on the small table , just like the previous time where I made  delicious flatbread with herbs . (See here)

The other night , I prepared for the occasion panmozzarella by Luca Montersino, seen on the web, a recipe that has amazing mozzarella dough. By adapting the recipe to my personal taste , I thought we would give some tasty flatbread pan mozzarella .

I made ​​some small changes to the original recipe that did not spoil the result , I didn’t put the dough in the fridge and I made double rise.

Ingredienti
  • 300 g spelled flour
  • semolina enough for the pastry
  • 120 ml of milk
  • 6 g of yeast (about one third of the cube)
  • 30 g of butter
  • 1 mozzarella 125 g
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • extra virgin olive oil to taste
  • sesame seeds and poppy seeds for garnish
  • coarse salt to taste to the surface
Preparazione
  1. Combine the flour, salt and sugar and place in a fountain.
  2. Dissolve the yeast in a little warm milk and put it in the center of the fountain.
  3. Combine mozzarella in the center previously crushed and pulped to loose remaining water.
  4. Also add butter into small pieces and brought to room temperature.
  5. Combine the remaining milk and mix. Form a homogeneous mixture, flouring from time to time with semolina.
  6. Let rise in warm place for 3-4 hours.
  7. After that wet your hands and flatten the dough with oil.
  8. With a glass forming disks that are arranged in a row on the baking sheet.
  9. Let them rise again for another hour.
  10. Then again with wet hands for oil, mash them lightly with your fingertips making small little holes, sprinkle with sesame and poppy seeds and bake at 200 ° C for 215 minutes approximately.

This dose will be about 10-15, depending on the size that you want to give.

I was thinking  to freeze some, however it was not possible!

Hola! For today’s post I was inspired by the recipe which is located behind the pack of the food.

Some time ago I cooked spelt and  I had  half a pack to finish. Turning round and round, I realize that behind the pack there was a fantastic proposal for how to cook it! Good! I have reviewed all according to my taste and here it is a wonderful and healthy receipe, Spelt with aromatic herbs with chicory:

  • 250 g of spelt
  • 1 carrot
  • 1 bay leaf
  • 1 sprig of rosemary
  • parsley to taste
  • herbs (thyme, marjoram, sage grass)
  • 2 tablespoons of tomato puree
  • 1 bunch chicory
  • 1 onion
  • salt to taste
  • extra virgin olive oil
Preparazione
  1. Wash and slice the chicory.
  2. In a skillet, brown the sliced ​​onion and add the chicory previously.
  3. Season with salt and cook over medium heat for about 30 minutes, covering it with the lid, turning occasionally and adding a bit 'of water if necessary.
  4. Cook the spelt in boiling salted water for 40 minutes (mine did not require soaking)
  5. Combine the cooking water a carrot cut in half, passata, bay leaf, rosemary and a drizzle of oil.
  6. At the end of cooking cool water in its spelled, drain and season with olive oil, chopped herbs, parsley and a sprinkling of parsley.
  7. Accompany it with the chicory

A warm spelt salad at sea flavor

Ingredienti
  • 125 g spelt
  • 10-15 cherry tomatoes
  • 2 anchovies
  • 150 g prawns
  • 100 g squid
  • 1 bay leaf
  • parsley to taste
  • 1 carrot
  • 1 stick of celery
  • 1 clove of garlic
  • oil ages
Preparazione
  1. Keep soaking spelt for 30 minutes (though in some packs not needed)
  2. Leave it to drain and rinse
  3. Coat it with water, add carrot and celery, bay leaf and a little oil.
  4. Bring to a boil and cook for 30 or 40 minutes.
  5. Cool in the cooking water.
  6. Meanwhile, in a skillet pasta wok type jumps saute with a little oil and garlic chopped tomatoes in half
  7. Add the anchovies cut into very fine pieces
  8. Add the squid and shrimp, season with salt and sprinkle with parsley.
  9. Deglaze with white and cook for 30 minutes.
  10. Drain spelt and blow it up in fish sauce.
Note
Like you can put even a sprinkling of chilli because there is!

I have an abundance of shrimp in the freezer and I had not understood squid eh …. anyway you have saved, are almost finished ahahhah.
