Today a first course recipe!

Here are cannelloni, I decided to make a vegetarian version with the latest eggplants.

Ingredienti
  • 250 g of pasta for lasagna
  • 2 small eggplants
  • 100 g of tomato sauce
  • extra virgin olive oil
  • 1 clove garlic
  • a few leaves of basil
  • For the sauce:
  • 30 g of butter
  • 30 g flour
  • 20 g parmesan
  • 300 ml of milk
Preparazione
  1. Prepare eggplant's sauce
  2. Cut the eggplant into cubes, fry with a little oil and a clove of garlic and basil.
  3. Add the past and cook for half an hour.
  4. Prepare the sauce:
  5. Melt the butter, add the flour and mix well.
  6. Then add the milk and bring to a boil over low heat, stirring with a whisk until 'it thickens.
  7. Add the pinch of salt, nutmeg and parmesan.
  8. To blanch the pasta for lasagna it cool.
  9. Use Butter to grease the pan to prepare the cannelloni:

Today I propose a recipe that is a bomb, then if light is considered as the second, maybe with vegetables or with a nice big salad is a great dinner!

Ingredienti
  • 1 eggplant
  • 4 balls of the scamorza (smoked even those who want to)
  • tomato sauce enough
  • grated cheese to taste
  • bread crumbs as required
  • oregano and basil to taste
  • extra virgin olive oil to taste
Preparazione
  1. Cut the eggplant into round slices
  2. Cook it a few minutes in a pan with a little oil

  • 320 g of pasta
  • 1 large eggplant
  • 300 g of tomato puree
  • 1 clove of garlic
  • 1 shallot
  • salt to taste
  • oregano to taste
  • basil to taste
  • shavings of ricotta salata
  • extra virgin olive oil
Preparazione
  1. Fry with a little oil the garlic and shallots.
  2. Join half eggplant cut into small cubes and cook for 5 minutes
  3. Add tomatp sauce, salt, basil and oregano
  4. Bake until the shrinkage of the sauce (about an hour), stretching with a little water.
  5. Slice the other half of the eggplant and cook in a separate pan with a little oil until it blush.
  6. Cook pasta and toss in the eggplant sauce by adding a little of the cooking water if necessary.
  7. Serve pasta combining eggplant and grated salty ricotta cheese

Because it’s hot and no one use the oven and you eat more and more willingly cool stuff, here is a very simple recipe, but, in my opinion, tasty, finger food tricolor.

Since shorts are all the rage .. and let them .. nooo ….

I have made with what I had in the house, that is,  tomatoes  by a friend of ours .. (holy) because those who generously gave me. Vegetables from garden are holy!

  • half eggplant
  • oregano to taste
  • 2 ripe tomatoes
  • 1 carrot
  • 1 onion
  • 100g goat's cheese, cottage cheese, or as an alternative growth
  • 1 clove of garlic
  • extra virgin olive oil
  • salt to taste
Preparazione
