Carbonara agretti and asparagus

Today a post a little less cool, but a dinner with pasta   is a must.

The idea of making these noodles arose from the fact that I found in the house a fresh bunch of agretti or commonly also called bearded friars, a tasty vegetable made in bunches, like chives but more purposes.

The combination agretti and asparagus was born by chance, I assure you that the result is great!

Ingredienti
  • 320 g of spaghetti
  • 1 bunch agretti
  • half a bunch of asparagus
  • parsley q.s.
  • 2 eggs 2 egg yolks
  • 30 g of cheese
  • 50 g of bacon cut into strips
  • pepper q.s.
Preparazione
  1. Wash and clean the agretti removing the ends
  2. Wash asparagus taking away the final part
  3. Cut into small pieces the agretti and asparagus.
  4. Cook for about 20 minutes with a little oil in a wok kitchen, with little salt and parsley.
  5. If necessary add a little of water.
  6. Cut the bacon into strips and let it crackle in a pan, set aside.
  7. Beat the eggs with the cheese.
  8. Cook pasta, drain and toss in the sauce of agretti and asparagus.
  9. Turn off the heat and put the eggs with cheese, mix well and serve garnished with crispy bacon.
  10. Sprinkle with pepper.

Ingredienti
  • 250 g of spaghetti
  • 80 g of shelled broad beans
  • a handful of pecorino
  • 100 g of frozen peas
  • bread crumbs as required
  • a shallot
  • a sachet of saffron
  • basil to taste
  • salt to taste
Preparazione
  1. Shelling beans, blanch in salted water for 20 minutes and peel them.
  2. Keep aside.
  3. Boil the peas in salted water and keep aside.
  4. Saltapasta In a wok, saute the shallots previously chopped, add the peas and broad beans, sprinkle with basil, add the cheese and cook for few minutes stretching with the water from the pasta.
  5. Aside finely chop the bread crumbs and make it blush in a pan with a little oil.
  6. Cook the pasta, drain and toss with the peas and beans by adding the saffron made ​​previously melted in a little 'cooking water.

Hola people! While I’m writing this post finally there is a ray of sunshine!

Today I cooked spaghetti with bottarga I met for the first time thanks to a friend Sardinian who has kindly given me a long time ago, came directly from the original Sardinia!
The bottarga is a food made up of the gonads of the fish, whose eggs are salted and dried by conventional methods.
It’s obtained from the eggs of tuna or mullet.

I embellished with a spectacular Sicilian condiment made with chillies and spices that I was affectionately given to me by my friends, directly from Pantelleria!! So ‘here’s the great spaghetti with bottarga:

Ingredienti
  • 320 g of spaghetti
  • 40 g of bottarga
  • extra virgin olive oil

Preparazione
  1. Bring salted water to a boil
  2. Cook spaghetti cooked until just firm

  4. When pasta is ready, drain, place in the wok and sprinkle with grated bottarga. Sprinkle with parsley and sauteeing pasta for few seconds, adding a little cooking water. Serve with grated bottarga here and there '.
