Sponge cake with orange

IIt’s lot of time that I wanted to make this cake soft and fluffy with orange.

One day, walking through the center to go to the bakery, I met this cute lady who taught me how to do pastiera … I stopped her and thanked her, telling her that this year I did very well pastiera .

She told me to make another cake that she makes to her grandchildren and they really like it.It’s with  orange juice … gave me two directions and in my own way I’ve played.

She was good good good and fragrant! Great for breakfast and for a healthy snack.

I used the sponge cake dough by adding the juice and zest of one orange, plus the vial of orange blossom. I assure you that there was a smell in the house as if you were still doing the pastiera.

  • 125 g of flour type 00
  • 125 g of potato starch
  • 100 g of butter
  • 3 eggs
  • 150 g of sugar
  • Juice of one orange
  • orange zest
  • a vial of orange flowers
  • 50 ml of milk
  • 1 packet of yeast
Preparazione
  1. Melt the butter to room temperature and whisk with the sugar until it forms a paste.
  2. Divide the egg yolks from the whites and whip them.
  3. Stir in one egg at a time and mix well to cream butter and sugar.
  4. Combine the flour with the starch .
  5. Add the orange juice, the vial and flour .
  6. Mix well and then add the egg whites from the bottom up to not remove the dough .
  7. Add the milk , orange zest and baking powder .
  8. Stir well from the bottom upwards
  9. Grease a cake tin (or line it with baking paper ) and bake at 180 ° C for 25 minutes.
  10. Sprinkle with powdered sugar.
Note
If you have not at home the vial of orange flowers, you can not put it, will still have the taste of orange juice given by.

Sole orange and almonds, today a recipe different from the usual, but with a delicate flavor.

Usually I like to prepare the fish in a simple way, I don’t like particular things because I believe that  fish does not need too much, but in doing so inspired me then here it is:

Ingredienti
  • 4 large fillets of plaice
  • juice of half an orange
  • salt to taste
  • 1 clove of garlic
  • extra virgin olive oil to taste
  • enough flour
  • 30 g of finely ground almonds

  1. Flour and salt fillets
  2. Place them in a baking dish greased with oil

  4. Bake at 180 degrees for 20 minutes.

This recipe is fantastic because the particularity is the chocolate chips in the dough of the pastry! Then there is chocolate and jam, all purchase points because it’s my jam (see post here).

Today they are sloppily .. we go straight to  reciepe, tart with homemade orange marmalade:

Ingredienti
For the pastry:
  • 300 g of flour type 00
  • 125 g of butter into small pieces
  • 100 g of sugar
  • 1 egg + 1 egg yolk
  • 40 g of chocolate drops

  1. Place the flour in the center put the sugar, butter, diced, egg and egg yolk.
  2. Begin to knead and also add chocolate chips to form the dough, do not knead too.
  3. Wrap in plastic wrap and refrigerate for about half an hour.
  4. Then roll out the dough and put it a mold cake pan with ⅔.
  5. Spread the inside with jam and then with the remaining dough make cords to garnish surface.
  6. Bake at 180 ° C for about 30 minutes.

The doses given are for a tart mold 24 cm, as you can see from the photo, I used a loaf pan therefore ‘doses are about half’.

You can also use different kinds of jam with this crust, or rather jams of red fruits that combine more ‘with chocolate, depending on your taste … for example we would be well jam raspberries, or strawberries.

Finally I did some of my spare inevitable jams in the pantry. I really like  jam in the morning and since it is still the season of oranges and I had never done, I tried the experiment, and it failed. A delicious taste flavored jam and accentuated by the peel.

To this I must again thank Paola, a cousin of my husband, now you know!

In fact, I asked her in the first place, in the web there were various ways of doing it. She is the only one in the family who prepares jams.

So I followed  directions, removing the peel and holding it by hand, being careful to remove all the existing white part that otherwise would give a bitter taste.

Here is the orange marmalade:

Orange marmalade, made with oranges to natural seasonal

Ingredienti
  • 1.2 kg of oranges absolutely natural and of excellent quality (whole weight of the orange)
  • 500 g of sugar
  • Juice of one orange
  • 1 glass of water
Preparazione
  1. Carefully wash the oranges, peel with a vegetable peeler and set aside the zest
  2. Cut across the white part with a knife to remove the peel and also the inner strands that are removed.
  3. Cut the flesh into small pieces and place in a saucepan with the zest, the juice of an orange and a glass of water.
  4. Bring to a boil and after 5 minutes add the sugar.
  5. Stir often and cook the jam almost 2 ore.Put it in sterilized jars, seal very well and boil for 5 minutes.
  6. Let them cool in the water boiling.

To make it I used my usual method, which does not separate myself, since I have never had problems.

I’m interested also to other preparations of orange marmalade, I think next year I’ll try  an other method!
