Colored cookies with kamut flour

Here are today a dessert recipe that is always nice, cookies, that even in the heat are always a doc snack especially if homemade.

As you know my daughter loves them, so every week I’m “forced” to cook them!

I wanted to color a bit the pastry   to make funny  simply incorporating a bit of colored tails that will melt and go to color biscuits.

I decided to get them made from kamut , but you can pick as the most you like.

  • 250 g of flour kamut
  • 100 g of butter
  • 50 ml of milk
  • 1egg
  • 110 g of sugar
  • 1 teaspoon baking powder
Preparazione
  1. Arrange in the flour mixed with sugar and a teaspoon of baking powder
  2. Combine the egg in the center, the butter into pieces and begin to knead.
  3. At the end add milk.
  4. Form a smooth paste.
  5. Now insert the dough, manipulating it, the colored tails, keeping aside a little to the surface.
  6. You will see the dough will be a little colored.
  7. Remove balls, forming braids and bake at 180 ° C for 12 minutes.
  8. Remove from the oven and enjoy

Wholemeal cookies cottage cheese and red fruits

Here today an healthy receipe, without butter but with cottage cheese!

Ingredienti
  • 250 g of wheat flour
  • 90 g of cane sugar
  • 170g fresh cottage cheese
  • 1 egg
  • 1 teaspoon of baking powder
  • 20 ml extra virgin olive oil
  • 80 g of dried red fruits
Preparazione
  1. Sift the flour, add the sugar and baking powder.
  2. Mix well, place a mound, make the hole in the middle.
  3. At this point, add in the center the egg, oil and cottage cheese.
  4. Mix everything and at the end incorporate red fruits.
  5. Form an homogeneous mixture.
  6. Roll out with a rolling pin height you want and cut the cookies.
  7. Place on baking sheet and bake at 180 degrees for 12-13 minutes.
  8. When they are slightly red, remove from oven, allow to cool.

  • 280 g spelled flour
  • type 00 flour as needed for dusting
  • 1 egg
  • 110 g of brown sugar
  • just enough to sprinkle granulated sugar cookies
  • grated lemon rind
  • 70 ml extra virgin olive oil
  • 1 teaspoon of baking powder
Preparazione
  1. Unire il lievito alla farina
  2. Aggiungere lo zucchero
  3. Fare la fontana, unire al centro l'uovo, l'olio, la scorza di limone ed impastare fino a formare un impasto omogeneo.
  4. Spianare l'impasto e ritagliare con le forme desiderate.
  5. Cuocere a 180°C per 12 minuti

This recipe is the recipe of my heart, recalls lovelymemories.

These are “tarallucci of Abruzzo” or in slang “gaggenette” have the scent of the Mediterranean that I will not never forget and that I really love. I remember when my grandmother, knowing my arrival for the summer holidays, bought a whole tray …. eh! Yes! my favorite desserts! I remember in the morning when I wake up, the scent of coffee go up the stairs and I  immediately slipped the costume just went down to the kitchen and here there waiting for the mythical orange thermos full of coffee ‘hot and sweet … so cilliprini’ I call them, cilliprini … (“celli stuffed” the jargon even so ‘) ..

I do not say the difficulty to find the grape jam, in the end I did it!

  • 1 glass of extra virgin olive oil
  • 1 glass of white wine
  • 450g. about of flour 00 ( the flour is put in theory that takes the dough , and these are Grandma's recipes ... they are to be taken so ' )

  • 250 g . jam grape juice ( " scrucchiate " in Abrruzzo slang )
  • 150 g . chopped almonds
  • 20 g . dark chocolate
  • a pinch of cinnamon
  • powdered sugar as much as necessity
Preparazione
  1. Put the wine into a bowl and mix the oil and add the flour like rain, the one you need, until it forms a smooth ball and homogeneous, not knead too much, you do not need and let it rest
  2. Meanwhile, prepare the filling: Toast the almonds have been chopped, mix together the legendary grape jam ( my aunts when they go down in Abruzzo I procure always a bit here and not equal .. but' that of CASA GIULIA and ' good ). Then add the chopped chocolate and a pinch of cinnamon.
  3. Roll out the dough too thin and not forming discs around 6 - 7cm in diameter -
  4. Fill them with a spoonful of filling and forming close torcetti .. ( see photo)
  5. Bake in the oven for 15 min. at 180 ° C, just begin to color immediately remove the dough should remain rather white .
  6. Sprinkle with powdered sugar to taste with sugar or regular white ... I like more with icing sugar ... fantastic freshly baked with a nice coffe
